French Toast Recipe

Hooley's Favouritest Bestest French Toast Recipe

3 tablespoons pouring cream
3 eggs
3 tablespoons caster sugar
pinch of cinnamon
pinch of nutmeg
8 thick slices of bread, cut in half diagonally
80g butter
1 tablespoon olive oil
12 slices proscuitto
maple syrup, to serve

Combine the cream, eggs, sugar, cinnamon and nutmeg in a wide, shallow bowl and mix togther. Soak the bread in the egg mixture, one slice at a time, shaking off any excess.

Melt half the butter in a frying pan, add 3-4 slices of bread in a single layer and cook until golden brown until both sides. Cook the remaining bread in batches, adding more butter as needed, and keeping the cooked slices warm in the oven.

Heat the olive oil in a frying pan, add the proscuitto and fry until crisp. Remove and drain on paper towels. Place the proscuitto on top of the French toast, drizzle with maple syrup, and serve.

Take 1 to 2 onions, 1 or 2 tomatoes, a pinch of salt, a VERY good sprinkle of pepper and start to fry off in a slow pan. When about half ready add a VERY good dose of chilli (fresh, powdered, dried or mashed, depending on availability). Add anything that takes your fancy . . . some capsicum, shallots (spring onions), a bit of celery, whatever. Spoon liberally over what ever you are having for breakfast, preferably some snags and toast, and enjoy the day.

I need someone to cook for (apart from MalFan because I hardly ever see him!) I don't suppose anybody would be interested in corn fritters with crispy proscuitto, or cheese and herb cornbread with scrambled eggs, or caramelised leek, goat's cheese and spinach tart? Maybe cinnamon porridge with caramel figs and cream, or ginger and ricotta hotcakes with fresh honeycomb, perhaps a slice of banana, sunflower and pistachio bread...

Does anybody know any good vegetarian snacks or canapes? I'm having a party in a few weeks and need to cater for everyone, not just the omnivores! I'm having dips with vegie sticks but that's not enough!

You could do savoury tartlets with ANY filling (and they taste fantastic). Buy the little tarts (tastier when you make them, but often pressed for time) and you can do so much. Roasted cherry tomatoes with wine sauce w/ garlic, rosemary, aniseed.

I'm getting hungry just thinking of it :(

You could make some Indian beginners? Pakora's, mini samosa's - that type? OHH. Spring rolls.
 
I have become somewhat of a master chef in the past few months...okay not really, but I've been doing a lot more cooking, even though I don't have anyone to cook for at the moment, lol. My flatmates and workmates have been benefiting! I've gone pseudo-vegetarian and have really enjoyed coming up with alternatives to meat. However I am still much more interested in baking than cooking! Damn my sweet-tooth...

Tonight I'm making an all-time favourite of mine...orange and poppyseed cake. Om nom nom. Will post the recipe later (once I've tried the cake and made sure it's delicious, haha!)

figs are nice, are you a full on vegetarian now have you gone all hippie on us Hools?

Lol nah not full on vego, I hardly eat any meat at all, have gone off it, but if I want bacon and eggs or whatever then I'll go ahead and eat it! But it doesn't happen very often. I just feel so much better when I don't eat meat, especially red meat! Burgers and steak and the like turn my stomach :thumbsdown:
 
When it comes to vegetarian stuff, I can't go past grilled haloumi cheese. Slice it up about a cm thick, chuck it on the pan until both sides are golden brown. My favourite way to serve it is by roasting some cherry tomatoes with oil, balsamic vinegar, salt and pepper until they go slightly puckered and caramelised, chuck them in with some roquette, chuck in the grilled haloumi, and use the left over oil and vinegar from the tomatoes as dressing. Absolutely fantastic. Can't get enough of it. Can make a mean entree, or you can serve it as a side salad. Goes great with lamb.

Orange and Poppyseed Cake
Oh **** yes, haloumi is amazing! Love love love. I can't buy it too often because I just fry it all up with some lemon juice and devour it!

Orange and poppyseed cake was pretty good, it's a healthy version so I don't feel too guilty after having a couple of slices, haha. Don't want to undo all my hard work at the gym! I'm really enjoying finding yummy healthy recipes. Turned out a bit flat for my liking...I used baking powder and self-raising flour as per the recipe, so I'm not sure what went wrong? The cake also took WAY longer than 50 minutes to cook, don't know if my oven sucks or what. I also used more milk in the ricotta cream. Anyhoo, a decent first effort for me :thumbsu:

Orange and Poppyseed Cake

1 medium orange
1/4 cup poppy seeds
1/3 reduced-fat milk
3 eggs, separated
1/3 cup smart white sugar blend
1/2 cup almond meal
1 cup self-raising flour
1/2 teaspoon baking powder
Vanilla Ricotta Cream (recipe follows ;))

1. Preheat oven to 180 degrees. Using a bamboo skewer, pierce orange all over. Place orange in small microwave-safe bowl. Microwave on high for 1-2 minutes or until soft; cool. Combine seeds and milk in a small bowl. Grease an 18cm round cake pan, line base with baking powder.

2. Using an electric mixer, beat egg yolks and sugar in a medium bowl until pale and creamy. Cut orange into quarters, remove seeds and white membrane, then chop coarsely. Place in the bowl of a small food processor and process until pureed. Add orange, almond meal, flour, baking powder and seed mixture to egg yolk mixture; stir to combine.

3. Using an electric mixer, beat egg whites in a medium clean, dry bowl until soft peaks form. Gently fold into orange mixture. Pour into prepared pan. Bake for 45-50 minutes or until a skewer inserted in the centre comes out clean. Cool in pan for 5 minutes, then turn out onto a wire rack to cool completely.

4. Make Vanilla Ricotta Cream as recipe directs. Top cake with ricotta cream.

Vanilla Ricotta Cream

200g reduced-fat ricotta
2-3 teaspoons smart white sugar blend
A few drops of vanilla essence
1 tablespoon reduced-fat milk

Combine ricotta, 2 teaspoons sugar, vanilla and milk in a medium bowl; stir until smooth. taste, then add remaining sugar if necessary.

I got some real nice blue cheese from 'Jindi', you can use any brand of course. They say its the best in the world and from right here in Aus, I made a quick dip.

Put straight in your blender/processor, 200g of Blue cheese, clove crush garlic, 150ml of Sour cream, juice of one lemon, salt and pepper and blend to a paste.

very nice dip, gonna try with some chives next time.

*used a bit on a steak, mmm.
