I ad lib my recipe depending on what I have but this is close.

Ingredients

  • 2kg ripe tomatoes
  • ½ a bulb of garlic
  • 2 red onions
  • 1pinch of dried oregano (or thyme)
  • EV olive oil
  • 1 litre organic vegetable stock (you can use water or chicken)... I use water
  • a few sprigs of fresh basil
  • 1 x ciabatta loaf
  • red wine vinegar
  • extra virgin olive oil

Basically roast all the tomatoes onion, garlic and herbs with oil s&p
Blitz add liquid and basil leaves
dunk with a good bread


I will write this in my recipe book for sure- otherwise ill forget about it.

Lasagne gets made tomorrow for NYs day

Bolognese sauce was made for spag bol a few days ago

Heres a basic Recipe for the meat sauce


  • a big glug of EVOO
  • 2 cloves garlic, chopped (dont add these until the mirepoix/ "Soffritto" is softened )
  • 2 onions, chopped
  • 1 carrot
  • 1 stick of celery
  • fist full of parsley
  • 2 bay leaf
  • 1kg minced pork
  • 2 rashers of bacon
  • 2 tbl spns tomato paste
  • 2 x 400g cans whole tomatoes
  • 1 cup (250ml) chicken stock
  • 2 cup of water
  • 2 cloves
  • oregano
  • splash of fish sauce
Brown the meat well in a fry pan (nice and brown thats flavour)

while gently sweating the mirepoix/ "Soffritto" in the main pot

Then cook out the tomato paste and combine everything in one pot cleaning up all the brown bits with water(you can use wine but I think it adds a sourness I dont like) and adding it into the main pot.

Add stock tomatoes and more water and let simmer for hours


Bechamel

About a 1/4 of a stick of butter
A few tablespoons of flour
A few cups of milk
Bayleaf
White pepper
Pinch of nutmeg
Handful of grated parmesan


Melt the butter add the flour slowly add the milk
Put the bayleaf in while its still wet before it thickens

fish the leaf out add the pepper nutmeg and parmessan

whisk or stir like made to keep it lump free

or give it a whack with the bamix

I will try and photograph assembly tomorrow


I leave it in the fridge over night as it softens the lasagne sheets nicely more than one day and its too soggy




Im also doing my NYs eve Paella for tomorrow too

so busy day

Pasta, chick peas, frozen vegies, chilli/tomato sauce. about $1 for a very filling meal buying San Remo, .70 with the Woolies brand. These people talking about 30c meals are full of it, or eating virtually nothing.
