Even as an extremely proud Melburnian, I won't hear a bad word said about Adelaide. Great place to head for the weekend as a single bloke - the male 'competition' there is farcicial. Most of the guys there dress like flogs from the Hilltop Hoods, and it makes it a breeze to pick up.

I have family that live in Adelaide and I always love going to the place. Couldn't put a finger on what it is, I just like the way it...is.

They live out near the hills, and it just looks cool. Nice trees, valleys, streams everywhere.

Also, when I was there over new years it was 42 degrees + and me and the old man went to the pub at 10 am and got the coldest pint of beer I think I've ever drunk.
 
I would be looking at education. I worked in Educational Publishing Industry for a while, don't do it, it's very boring, and the amount of foreign students who study here blew my mind. Bearing in mind that they are pay full fees to the university , as well as board, and have you seen the price of KFC these days (stereotyping, I know), these kids are putting a lot of money in local pockets. Rann had it right, amazingly, when he was trying to attract foreign universities to open offshore campus' in Adelaide. There are two good universities in Adelaide and UNISA, there is a massive burgeoning middle class in India and China, who want a better future for their kids than they had. Adelaide is a small town and easy to get around, it's cheaper to live in the all other mainland states, it has a lot of attractions to foreign students.
