I do a similar salad with rocket, fennel, pear, walnuts, mint & a lemon/orange dressing... It's my go to when I need a salad that cuts through big, heavy fatty dishes... Which is just about every day haha.
Perfect with pork belly!

Salmon noodle salad
I made a nice Salmon noodle salad last night just with what I had. The dressing in particular I feel like I freakin nailed.

Was (all sliced up) a few spring onions & put half the green section in & half the white section in, 2 cloves of garlic, a few chillis (I like it hot), a glug of soy & a bigger glug of sesame oil, a very small amount of mined ginger, not quite a teaspoon of brown sugar & juice of a lime. Mix it up & let it all sit to come together for a few hours.

Par cooked some noodles then chucked them in an ice bath ready to stiry fry later.

Pan 1 - Fried some delicious skin on salmon.

Pan 2 - Stiry fried the remaining white section of the spring onions, mushrooms, julienned carrots & zucchini batons. Adding the noodles & sauce at the end to heat through.

Served it all up with fried shallots, more chili & the remaining green spring onion section on top. Was delicious!!

Okay yeah, that sounds totally delish GTG. What type of noodles?
 
Lasagna
By request

Lasagna

Brown mince with a diced onion

Then add chicken stock
Oregano
Basil
Garlic
Parsley
Tomato paste
Tin tomato diced
Then fill that can and add water

Let it simmer


In another saucepan'

Butter melt
Take off the saucepan
Then add flour
Put back on cook a bit make a paste
Add milk til its a white sauce
Add a spoonfull of jar cheese'
Cup of grated cheese, keep stiring

Them assemble with lasanga sheets
 
Okay, so if the day after tomorrow was my last day on earth, tomorrow I would eat 3 courses comprising:

Scallops: straight from the ocean & barely cooked with very few ingredients (a ginger, sesame, tamari, spring onion type thing)

Chinese roast duck: from the Adelaide Central Market, dipped in their special sauce and chewed off the bone and also in a simple noodle broth (with chilli on the side)

Mangoes: just mangoes, nuthin else

Anyone else have an ideal last meal?

Obviously miggs would have lots of bacon, The King would have avocado and Klim would have pizza...

It's a tough one. Tastes change over time...

Atm I reckon...

1. Some kind of light, Asian thened seafood dish.... Actually, I'd probably just steal Maxs scallops.

2. Either...

A) a beautiful steak (I'm talking sell your first born top of the line type stuff) + Mash/potato scallop/roast kipflers + fried up Brussel Sprouts/Asparagus + Horsradish cream

Or

B) A slow cooked pulled pork burger + slaw + tater tots.

3. Creme Burle.

The Spiced Apricot one (pg. 273 of his "Cook Book") is awesome.

I agree with this one, and it is fairly simple to make.
