Yep. Same here. I'll add mayple syrup & strawberries if I want it fancied up but it's pretty good just as it is.
I only had bacon because I was snickered..... and starving! :rolleyes:

Chicken breast stuffed with mozzarella and pesto
Cooked up this one the other night. Recommend. Quick and easy and tastes great. Chicken breast stuffed with mozzarella and pesto
Also, cooked in a pan. Did not use the string or toothpicks, don't think you need them if you don't overstuff the chicken breast.

250g baby grape tomatoes
4 x 250g chicken breasts
2 tablespoons basil pesto
220g mozzarella, thinly sliced
1/4 cup (60ml) extra virgin olive oil
100g baby rocket
1 tablespoon lemon juice

Cook's notes​

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. |

1. Slice 6 tomatoes. Halve remaining tomatoes and reserve for salad.

2. With a sharp knife, cut a slit in 1 side of each chicken breast fillet and open butterfly-style. Cover with plastic wrap. Using a rolling pin, pat chicken gently, without breaking flesh, until thin. Spread inside of chicken with pesto, then place mozzarella and sliced tomatoes on each half. Fold other half over to enclose filling and secure with toothpicks or kitchen string.

3. Preheat barbecue on medium. Brush chicken with 1 tablespoon of oil and season to taste. Cook chicken for 10 minutes, until lightly charred and cooked through. Meanwhile, toss baby rocket with halved tomatoes. Drizzle with remaining oil and lemon juice and season to taste.

4. Serve chicken with salad.

Plenty of healthy treats there too. But they're no where near as tempting as the other stuff.
I'm cooking up the Chinese beef and broccoli tonight. See! Healthy;)
 
So just made myself an unexpectedly awesome meal.

Kangaroo steaks with a sumac coated beetroot leaf salad & some delicious pan jus mushroom sauce.

Just whipped it up with what I had and I needed to tell someone how awesome it was (I don't have FB or anything so this is it social media wise).

No. I made it, thought "hey that looks pretty good", tasted some... and it was gone very soon thereafter. It never stood a chance of lasting any good amount of time, not least to be photographed. I can assure you it was delicious though.

You haven't been fishing in this weather yet?

Okay. That sounds freaking fabulous! Just plain roo steaks, or marinated?
